Ginger Juice Extraction Using Dewatering Screw Press

Ginger juice has long been revered in Indian tradition for its therapeutic and culinary value. Known for its digestive, anti-inflammatory, and immunity-boosting properties, ginger juice has played a pivotal role in Ayurveda and home remedies. With growing demand in both health and functional food sectors, ginger juice is now being used extensively in wellness shots, smoothies, kombucha, and even ginger-infused craft beers.

Nature of the Material

Ginger, when freshly harvested, contains a significant amount of water along with fibrous matter and essential oils. This makes it an ideal candidate for extraction using a screw press. However, due to the tough fibrous nature of ginger, efficient extraction requires a robust mechanical process that can handle both shredded and whole root forms.

The Extraction Trial

To address increasing client inquiries, a trial was conducted using fresh ginger sourced from the local produce market. The ginger was thoroughly washed, and trials were carried out using both shredded and unshredded forms. The objective was to evaluate the efficiency and juice quality from each form using our in-house 4-inch screw press equipped with a 1 mm perforated screen.

The test demonstrated that both forms could be processed efficiently, but shredded ginger provided a marginally higher yield and smoother output, aligning with our client’s intended process setup.

The output was described by clients as “consistent and commercially viable”, and the fibrous pulp was efficiently separated from the liquid phase. The continuous process design of the screw press helped ensure a smooth operation, with minimal downtime or manual intervention.

Post-Processing

The extracted ginger juice may be passed through a fine mesh filter or centrifugal separator to achieve a clarified juice product suitable for bottling or blending. The remaining press cake, rich in fiber and residual nutrients, can be used in compost, dried for further processing, or used in feed formulations.
